Here is your shopping list: ground beef, onion, taco seasoning, cabbage (read about the health benefits of cabbage), carrots, a can of beef broth and two cans of diced tomatoes. You can also grab some cilantro and sour cream, for serving, if you feel so inclined.

- 1 - 1 1/2 pounds ground beef or ground turkey
- 1 onion, chopped
- 1 ounce (1 packet) taco seasoning
- 1 head cabbage, chopped
- 1 carrot, chopped
- 14 ounces (1 can) beef broth
- 28 ounces (2 cans) diced tomatoes
- 3 cups water

Here's how to make it:
- Cook the ground beef and onion in a large soup pot until meat is browned and onion is soft, about 5 minutes
