Ingredients
- 2 cups moist Medjool dates, pitted and chopped
- 2 cups raw almonds
- 1/2 cup pecans
- 3/4 cups cocoa powder
- 1/2 cup unsweetened shredded coconut
- 2 tablespoons vanilla
- 2 - 3 tablespoons cold water (adjust as needed)
- pinch sea salt (optional)
- optional toppings: ground coconut, almonds and/or pecans
Recipe Notes
- The amount of energy bars depends on the size of the slices you cut.
- If you want to add a little more chocolate flavor, fold in some chocolate chips after blending.
- Refrigerate at least an hour to allow the bars to set before serving.
- Store in an airtight container in the refrigerator.
