- 3 tablespoons cornstarch
- 1 cup whole milk
- 3/4 cups sugar
- 1 cup heavy cream
- 3 egg yolks
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
Here's how to make it:
- Dissolve the cornstarch in a little of the milk until smooth.
- Put all the ingredients, including the cornstarch slurry, into a saucepot. Whisk to combine. Cook over medium heat , stirring constantly, until it just begins to boil and thicken. Turn off the heat.
- Pour the pudding through a mesh strainer into a bowl. Cover and refrigerate until cold.
