Ingredients
- 8 ounces spaghetti noodles (or your favorite pasta), cooked according to package directions for al dente (save 1/4 cup of the pasta water)
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 small onion, chopped fine
- crushed red chili flakes, to taste (optional)
- 3/4 tomato puree
- 1 teaspoon dried basil
- 4 ounces cream cheese
- 1/4 cup grated Parmesan cheese, plus more for serving
Here's how to make it:
- Heat the olive oil in a skillet over medium heat. Add the onion and crushed red chili flakes, if using, and cook until soften, about 2 minutes. Add the garlic and cook 30 seconds.
- Add the tomato puree and basil and simmer gently on low heat for about 5 minutes.
- Add the cream cheese, Parmesan and reserved pasta water. Cook, stirring, until cheese has melted. Season with salt and pepper.
- Add the pasta and stir to coat the noodles. Serve with grated Parmesan cheese.
