Trader Joe's Pancake Bread Copycat Recipe: How Did I Not Know About This? by Donna John

Trader Joe's is my jam. I love that store! But there are a few sections I don't pay much attention to, one being the shelves with the baked goods. After finding out about this pancake bread that's been sitting quietly there, I wonder why. Yum! But with the closest Trader Joe's to me being 45 minutes away, I decided to try a copycat pancake bread recipe.
This easy pancake bread recipe was put to the test on YouTube by Eats By Rachel. Though both were good, this one was better than the original. It's so easy to make and the perfect quick breakfast, addition to your brunch spread or sweet snack. Wrap up individual slices and pop them into your kid's lunch box. To up the deliciousness, add a side of homemade pancake syrup.

Ingredients
Topping
- 1/3 cup granulated sugar
- 1/3 cup dark brown sugar, packed
- 3/4 teaspoon ground cinnamon
- 1 stick (8 tablespoons) unsalted butter, melted
- 1 1/4 cups all-purpose flour
- pinch of salt
Batter
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 cup malted milk powder
- 1/4 teaspoon salt
- 1 stick (8 tablespoons) unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 2 eggs, at room temperature
- 1/2 cup buttermilk
- 1/2 cup maple syrup
- 1 teaspoon vanilla
Here's how to make it:
- Line a 9x5-inch loaf pan with parchment paper, overhanging on the sides. Spray with cooking spray.
- In a bowl, stir together the topping ingredients until they resemble coarse crumbs. Set aside.
- In a large bowl, whisk the flour, baking soda, baking powder, malted milk powder and salt together.
- In another bowl, beat together the butter and sugar with an electric mixer until light and fluffy. Add the eggs, one at a time, and beat after each addition. Pour in the buttermilk, maple syrup and vanilla. Mix well.
- Add half of the dry mixture into the wet ingredients and stir to combine. Add the remaining dry mixture and mix until just incorporated. Pour the batter into the loaf pan. Top with the crumb topping.
- Put the pan onto a baking sheet and bake in a preheated 325-degree F oven for about 1 1/2 hours or until a toothpick comes out clean. (Baking times will vary because ovens vary.) Remove and let the bread cool for about 15 minutes before running a knife around the edges and lifting the bread out of the pan. Cool completely before slicing and serving.
