Creamy No-Bake Lemonade Pie Recipe Is Light & Fluffy Like a Cloud by Donna John

My dad loves lemon desserts, especially lemon meringue pie. I am always on the hunt for different lemon recipes to make for him. With it being so hot outside, this no-bake lemonade pie recipe caught my eye. Light, creamy and full of lemony goodness, this pie recipe put a big smile on my dad's face – and mine!

There's enough filling to make two pies, so buy an extra pie crust and share. Everyone needs a smile – and pie – to brighten their day.

Total Time: 10 minutes plus 8 hours to chill
Servings: Makes 1 pie

Ingredients

• 1 can (12 ounces) evaporated milk
• 2 boxes (3.4 ounces each) lemon instant pudding mix
• 1 tablespoon lemon zest 
• 2 boxes (8 ounces each) cream cheese, softened 
• 1 can (12 ounces) frozen lemonade concentrate, thawed 
• 1/2 teaspoon vanilla
• 1 9-inch ready-made graham cracker pie crust
• whipped cream, for serving
• crushed lemon drop candies, for garnish (optional)

Here's how to make it: 

1. Whisk together the evaporated milk, instant pudding and lemon zest in a bowl for 2 minutes or until thickened.
2. Beat the cream cheese with an electric mixer until fluffy. Add the lemonade and beat until smooth.
3. Add the vanilla and beat until well blended. Pour the mixture into the pie crust.
4. Cover and chill at least 8 hours or until firm. Garnish with whipped cream and lemon drop candies, if desired.
